Gut Friendly Yoghurt and Blueberry Muffin Recipe

You can't go wrong with this yummy muffin recipe from accredited nutritionist Faye James! Filled with lots of gut friendly bacteria, it is the perfect treat for the whole family to enjoy!

 

Ingredients

Makes 12 muffins

● 300g almond meal

● 2 tsp baking powder

● 60g monkfruit sweetener

● 3 eggs

● 1 lemon zested

● 120g kefir

● 50g extra virgin olive oil

● 1 tsp vanilla bean extract

● 125g blueberries

 

Method

1. Preheat the oven to 180°C. Line muffin tray with muffin papers.

2. Place the dry ingredients in a medium sized bowl and lightly whisk until

combined.

3. Add the eggs, lemon zest, kefir, olive oil and vanilla bean extract and whisk until you get a smooth batter.

4. Fold in the blueberries.

5. Divide batter evenly between muffin papers and bake for 20-25 minutes or until a wooden skewer inserted into the centre comes out clean.

6. Transfer to a wire rack and let cool for 15 minutes before removing from muffin tray.
