Gut Friendly Fennel & Radish Salad Recipe

With no need to cook, this simple but tasty recipe from accredited nutritionist Faye James, is the perfect colourful and fresh dish, packed full of nutrients.

 

Ingredients

Serves 8

● 2 tbsp extra virgin olive oil

● 2 tbsp lemon juice

● 2 tbsp kefir

● 1 Lebanese cucumber, peeled into ribbons

● 1 bunch radishes, trimmed, thinly sliced

● 1 small fennel, thinly sliced

● 1 oakleaf combo lettuce, leaves torn

● 2 tbsp chopped fresh mint leaves

● 2 tbsp chopped fresh flat-leaf parsley leaves

● 2 tbsp chopped almonds

 

Method

1. Place oil, lemon juice and kefir in a large bowl. Season with salt and pepper.

2. Add cucumber, radish and fennel.

3. Toss to combine. Set aside for 5 minutes.

4. Add lettuce to mixture. Toss to combine. Sprinkle with mint, parsley and chopped almonds.

5. Serve immediately.
