Spiced Asian Turkey Salad Recipe

A light and nutritious meal, perfect for using up left over turkey! You could even swap the turkey out for chicken! 


Serves 4 

  • 1 packet rice noodles, cooked to instructions

  • 1 skinless turkey breast, cooked and shredded

  • 200g snow peas blanched

  • Handful mint leaves, chopped

  • Handful coriander leaves, chopped

  • 3 spring onions, chopped

  • 1 red chilli, chopped

  • 1 cup coconut milk

  • 1⁄4 cup lime juice

  • 1 tsp fish sauce

  • 1 tsp coconut sugar



  1. Toss the cooked noodles with the shredded turkey, snow peas, mint, coriander, spring onions and red chilli in a medium sized bowl.

  2. Whisk together the coconut milk, lime juice, fish sauce and coconut sugar in a small bowl until well combined. Add to salad and mix well to combine.
