Salmon & Soba Noodle Salad Recipe

This salmon & soba noodle salad is packed with seasonal veggies and omegas! The perfect easy to make dish to satisfy your rumbling tummy!



Serves 4

● 3 skinless salmon fillets

● 250g soba noodles

● 1/4 cup lime juice

● 2 tbs vegetable oil

● 1 tbs rice wine vinegar

● 2 tsp soy sauce

● 1 tsp sesame oil

● 1 lebanese cucumber cut into ribbons

● 100g edamame, cooked

● 1 carrot, peeled and cut into matchsticks

● 2 spring onions

● 3 radishes, thinly sliced

● Toasted sesame seeds



1. Bake the salmon fillets in the oven at 180 for around 7 minutes until tender. Let rest for 5 minutes before flaking with a fork.

2. Cook noodles according to instructions on the packet, drain and toss in a little sesame oil.

3. Mix the lime juice, vegetable oil, vinegar, soy sauce and sesame oil in a bowl.

4. Toss in the cucumber, edamame beans, carrot, spring onions and radishes and mix well so the dressing is well combined.

5. Top with flaked salmon and sesame seeds.
