Low-Carb Chicken Chow Mein

Who fancies Chinese tonight? Try this low-carb chicken chow mein which is packed full of veggies for extra nutrients!



Serves 4

  • 2 tbsp vegetable oil

  • 500g chicken thigh cut into strips

  • 250g broccoli florets

  • 4 garlic cloves, minced

  • 2 red chillis sliced

  • 400g konjac noodles

  • 1 cup bean sprouts

  • 1⁄2 cup toasted cashews

  • 1⁄2 chopped spring onions

  • 2 tsps soy sauce

  • 2 tsps sesame oil



  1. Heat a wok over a high heat and add the vegetable oil and chicken strips and fry until golden for about 3 minutes. Transfer to a plate and set aside.

  2. Add the broccoli, garlic, chili and noodles and fry until tender.

  3. Return the chicken to the pan along with the bean sprouts, cashews, spring onions, sesame oil and soy sauce and cook for another 1-2 minutes.

  4. Serve immediately.
