Gut Friendly Baked Oats with Peaches Recipe

This dreamy recipe from accredited nutritionist Faye James is filled with nutritional goodness that not only tastes good, but will keep your gut feeling happy!


Seves 6

● 135g rolled oats

● 40g desiccated coconut

● 1/2 teaspoon ground cinnamon

● 1/2 teaspoon ground ginger

● pinch sea salt

● 90g pure maple syrup

● 1 tsp vanilla extract

● 730g kefir

● 2 medium nectarines or peaches, cut into thick wedges

● 2 tablespoons coconut sugar

● Greek yoghurt to serve.



1. Preheat oven to 180°C. Grease an ovenproof dish.

2. Combine oats, coconut, cinnamon, ginger, salt, maple syrup and vanilla in dish;

then stir in kefir.

3. Bake porridge for 40 minutes.

4. Meanwhile, place peaches in a small baking dish; sprinkle with coconut sugar,

then pour over ⅓ cup water.

5. Bake on a separate oven shelf to porridge for the last 20 minutes of porridge

cooking time.

6. Serve porridge topped with baked peaches and a dollop of greek yogurt.
