Gluten Free Corn Fritters Recipe

Ingredients
Serves 4

1⁄4 cup Greek yoghurt

1 avocado mashed
-
1⁄2 lemon, squeezed
-
Chilli flakes to taste
-
3 cups fresh corn kernels
-
3 spring onions, finely sliced

2 eggs, whisked
-
1 cup almond meal
-
1 tsp baking powder
-
Salt and pepper to taste

2 tbsp olive oil
-
Smoked salmon to serve
-
Rocket leaves to serve

Lemon wedges to serve
Method

Mix Greek yoghurt, avocado, lemon juice and chilli flakes in a small bowl and set aside.

Mix together corn, spring onions, eggs, almond meal, baking powder and seasoning to form the fritter batter.

Heat the olive oil in a medium-sized pan and dollop a spoonful of batter in and pan fry in batches for 2-3 minutes on each side.

Transfer to a baking tray and keep warm in the oven while you are making the rest of the fritters.

Serve corn fritters with avocado salsa, smoked salmon and rocket and a few lemon wedges.
